Egg Salad Bodybuilding Recipe

Quick Egg Salad Sandwiches Main Dish

This works best if you boil the eggs as soon as you get home from the grocery, and keep them in the refrigerator.

1 hard-boiled egg
½ cup 2% cottage cheese (or Dijonnaise)
1 teaspoon capers
1 teaspoon caper juice
½ teaspoon black pepper
¼ teaspoon salt
2 chopped green olives
4 slices toast
2 large lettuce leaves
2 large slices of tomato

Mash the egg and cottage cheese until chunky. Add next six ingredients, and stir well. Put the lettuce slices each on a piece of toast, spread the egg mixture next, and top each sandwich off with a tomato slice. Sprinkle with pepper and pop on the top piece of toast.
