Chickpea Curry Bodybuilding Recipe
Creamy Chickpea Curry (Hot!) Non-stick cooking spray spray (olive oil flavor)
1 tablespoon curry base (from international section of most supermarkets)
1 cup chopped onion
3 cloves crushed garlic
1 14-oz. can light coconut milk
2 tablespoons light soy sauce
1 15-oz. can chickpeas, drained
1 tomato, cut in 1" cubes
¼ cup peanuts, crushed
1 cup fresh basil, chopped
2 tablespoons sugarIn a pan heavily sprayed with non-stick cooking spray, sauté curry base, onion and garlic. Stir in coconut milk and soy sauce. Boil for 5 minutes, stirring constantly. Add last 5 ingredients. Allow to simmer until mixture begins to thicken. Cool until it reaches desired thickness. Serve over jasmine rice.
